Roast Lamb Shoulder

Ingredients:

2 1/2 kg Lamb shoulder 
1 tsp Garam Masala Powder 
1/2 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
1 tbsp Ginger & Garlic Paste
1 tsp Dry Rosemary
1 tsp Olive Oil
         
Method:

Step 1. Mix the above ingredients together and rub the lamb making sure to get the mix properly all over the meat. Leave to marinade for half an hour. Preheat oven to 250ᵒC

Step 2. On a hot skillet add a tsp of oil and brown the meat on all sides.

Step 3. Place in the oven and drop the temp. immediately to 180ᵒC and cook for 1 hr 45mins for a nice medium rare. If you want it well done then let it be in the oven for an additional 40 mins

Step 4. Take out from the oven and let it rest for at least 1/2 hr before cutting. This ensures you don't loose any of the lovely juices. 

Step 5. De-glaze the pan by adding some water and scraping all the goodness stuck to the bottom of the pan. Use this to pour over your roast while serving.
